Method
Preheat the oven to 400°F.
Dust a work surface with a small amount of flour. Unwrap 1 sheet of puff pastry and place it on the flour. Coat a rolling pin with a little flour and roll out the puff pastry in a rough 11-inch square.
Place the brie in the middle of the puff pastry square. Score the top of the brie by dragging a knife just on the top about 4 times diagonally. Spread the Date Tamarind Chutney evenly over the top.
Fold the corners over the brie, forming a parcel. Neaten up the sides by gently pressing the edges against the brie.
Brush the top with egg wash and sprinkle with optional sugar.
Bake at 400°F for 35-40 minutes, or until the pastry is a deep golden brown and the cheese is melted inside.
Cool for 5-10 minutes which will help the cheese firm up a little.
Serve warm with crostini or crackers. Enjoy!
