Masala Tofu Scramble

Garlic Tofu Scramble Toast

When the egg prices go up, we resort to tofu. This masala ofu scramble is so easy and full of flavor thanks to our Roasted Garlic Achaar. Give this alternative a try, you won't be disappointed!

Serves 4

Ingredients

14 oz tofu 

veggies of your choice 

1 tablespoon oil

1/2 onion, diced

1 red bell pepper, diced

1/2 tsp turmeric

2 tbsp Brooklyn Delhi Roasted Garlic Achaar, or more per taste

salt

4 slices good bread, toasted

mayo or Vegannaise 

Brooklyn Delhi Guntur Sannam hot sauce

cilantro, chopped



Method

Drain the tofu and wrap it in a paper towel. Place it on a plate and put another plate on top. Microwave for a few minutes.

Unwrap the tofu, cut it into cubes, and mash it with a fork in a bowl.  

Heat some oil in a non-stick pan over medium heat. Add onion and peppers and cook until soft.  

Stir in turmeric and Roasted Garlic Achaar, mashing any garlic pieces as needed.  

Add the mashed tofu to the pan. Sauté until most of the water evaporates and the tofu starts to brown. Add salt to taste.  

Remove the tofu scramble from heat.  

Spread mayo or Vegenaise on each piece of toast. Drizzle Guntur Sannam hot sauce on top of the mayo and swirl it in.  

Top the toast with the tofu scramble. Garnish with cilantro and more hot sauce if desired.
